Beers produced with bottom fermenting yeast strains at colder fermentation temperatures than ales. This cooler environment inhibits the natural production of esters and other byproducts, creating a crisper tasting product.

Fermentation is the process in which yeast consume sugar to produce alcohol and carbon dioxide. Bottom fermenting or Lager yeast do most of their work at the top of the tank where fermentation takes place, hence the term Bottom Fermenting. Bottom fermenting Lager yeast and top fermenting Ale yeast are different strains of yeast.
